Best way of making use of over ripe bananas - oat flour banana pancakes!

Plain is good, but who can say no to dark chocolate chips?


Thursday and Friday mornings are always a bit of a rush when it comes to making breakfast/late lunch, but trying to make tomato gocchi bake in 20 minutes was definitely a challenge...

 

The brussel sprouts tasted so good though!

Whoever said pumpkins taste best in Winter was very, very wrong. Pumpkins taste best when freshly cut in half, cut-side down in an 180℃ oven.

Pop them in the blender, then freeze in a muffin tin sprayed with olive oil.

 

And voila! Pumpkin puree, ready to be put in scones/waffles/pancakes!
